The Danish chef is best known for North Road, his Michelin-starred restaurant in London where he explored new-Nordic culinary themes, but he’s always been fascinated by ice cream. Could he make a restaurant quality product, showcasing more unusual botanical flavours, for eating at home? Months of research, training, development, testing, tasting, and more than a little brain freeze followed. The culmination of a love of nature, of using the best ingredients in the simplest way, and a little bit of magic, Wilder is a perfect culinary moment, waiting in your freezer.

Pine Needle
The Pine needle is part of the new Nordic flavour palette. It’s like a crisp walk in a Nordic forest and brings subtle exotic citrus and perfumed Douglas fir notes.
Burnt Butter
Burnt butter is destined to be a crowd-pleaser. Think salted caramel, but more refined – a rich and moreish treat, where all the pleasure centres for sweet, fat, salt get a turbo-charged hit from rich butter.
Seabuckthorn and Carrot
Wilder draws its inspiration from the Nordic passion for foraging and nature. Sea Buckthorn is a tart berry with an almost citric tang; the sweet earthiness of carrots is incorporated to complement the Sea Buckthorn.
